Base for Dairy Free, Vegan, Paleo Cheeses
Flexibility is an important feature of our dairy free, Vegan and Paleo mixes, kits and recipes.
The mixes for cheese and sauces were formulated with very basic food ingredients but they are wonderfully effective at giving you a consistent creamy result.
The bases we suggest in each recipe were chosen because they result in the closest match to the traditional dairy cheese.
Thankfully, they cover many dietary preferences so that they work for anyone!
The final texture, mouth-feel, color and flavor of your creation will change a little as try different bases and that's part of the fun.

Base ingredients:
Nuts
- Blanched almond flour (not almond meal, store-bought or homemade)
- Raw cashews (whole or pieces)
- Raw, blanched skinless almonds (usually slivers)
- Raw macadamia nuts
- Raw walnuts
- Raw Brazil nuts (try to remove the brown skin)
- Raw or roasted pine nuts (strong taste - best mixed with others)
Seeds
- Raw sunflower seeds
- Hemp seed hearts (strong taste - best mixed with others)
Beans
- White beans - Cannellini, Northern Beans, etc., cooked and drained (canned are fine)
Veggies
A variety of steamed vegetables can also be used. We like cauliflower, zucchini, carrots and red or yellow peppers best.
